Spicy Pickled Garlic Cloves

Here’s the recipe for Spicy Pickled Garlic Cloves
Ingredients:
3 cups garlic cloves, peeled
2 cups white vinegar
1 cup water
2 tbsp sugar
1 tbsp salt
1–2 tsp red pepper flakes (adjust to spice level)
4–5 sprigs fresh rosemary (or dill, optional)
1 tsp whole black peppercorns
Instructions:
Prepare the Garlic
Peel the garlic cloves and blanch them in boiling water for 1 minute. Drain and set aside.
Make the Brine
In a saucepan, combine vinegar, water, sugar, and salt. Bring to a simmer, stirring until sugar and salt dissolve.
Pack the Jars
In sterilized glass jars, layer garlic cloves, rosemary (or dill), red pepper flakes, and peppercorns.
Add the Brine
Pour the hot brine over the garlic until fully covered, leaving about ½ inch of headspace.
Seal & Store
Wipe rims, seal jars with lids, and let cool. Store in the refrigerator for at least 1 week before eating for the best flavor.
