Italy’s Most Loved Cake

Ingredients:
For the dough:
1 egg
Zest of one lemon
125g (1/2 cup) sugar
310g (2 1/2 cups) flour
5g (1 teaspoon) baking powder
140g (140g) softened butter
1/2 teaspoon salt (optional)
Preparation:
In a large bowl, beat the egg and sugar until the mixture becomes light and fluffy.
Add the lemon zest and beat well.
In another bowl, mix the flour, baking powder, and salt (if using).
Add the dry ingredients to the wet mixture and beat until the dough becomes smooth.
Add the softened butter and beat until the dough becomes homogeneous.
Place the dough in a buttered and floured cake pan.
Bake in a preheated oven at 180°C (350°F) for 30-40 minutes, or until the cake becomes golden and firm.
Let the cake cool before serving.
