Chicken Caesar Pasta Salad
Ingredients:
For the Salad:
2 cups cooked chicken breast (grilled or shredded)
2 cups cooked pasta (penne, rotini, or bowtie work well)
2 cups romaine lettuce, chopped
1/2 cup cherry tomatoes, halved (optional)
1/4 cup red onion, thinly sliced (optional)
1/2 cup croutons
1/4 cup parmesan cheese, shaved or grated
For the Caesar Dressing (or use store-bought):
1/2 cup mayonnaise
2 tbsp grated parmesan cheese
1 tbsp lemon juice
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1 garlic clove, minced
Salt and black pepper to taste
1–2 tbsp water or milk (to thin the dressing if needed)
Instructions:
Cook pasta according to package directions. Drain, rinse with cold water, and let it cool.
In a large bowl, combine the cooked pasta, chopped chicken, lettuce, tomatoes, red onion, and croutons.
Make the dressing by whisking all the Caesar dressing ingredients together in a small bowl until smooth.
Pour dressing over the salad mixture and toss gently to coat everything evenly.
Top with parmesan cheese and a few extra croutons for crunch.
Serve immediately or chill in the fridge for 20–30 minutes for a cold pasta salad.
