- Ingredients:
1 lb white fish fillets (cod, tilapia, or haddock), cut into chunks
1 tablespoon olive oil
1 medium onion, diced
2 garlic cloves, minced
1 red bell pepper, diced
1 can (13.5 oz) coconut milk
2 cups fish stock or vegetable broth
Juice of 2 limes
1 tablespoon fish sauce
1 teaspoon ground turmeric
1 teaspoon red chili flakes (optional)
½ cup fresh cilantro, chopped
Salt and pepper, to taste
Lime wedges, for garnish
- Directions:
1️⃣ Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 2-3 minutes until translucent. Stir in the garlic and red bell pepper, cooking for an additional 2 minutes until fragrant.
2️⃣ Create the Base: Pour in the coconut milk and fish stock, mixing well. Add lime juice, fish sauce, turmeric, and chili flakes (if using). Bring to a gentle simmer, stirring occasionally.
3️⃣ Cook the Fish: Gently add the fish chunks to the simmering soup. Let it cook for 6-8 minutes, or until the fish is opaque and flakes easily with a fork.
4️⃣ Season and Finish: Taste the soup and adjust with salt and pepper as needed. Stir in the chopped cilantro just before serving for a fresh burst of flavor.
5️⃣ Serve: Ladle the soup into bowls and garnish with lime wedges and additional cilantro, if desired.
