This cake is the perfect mix of simplicity and flavor — creamy inside with a golden, slightly crispy top. You don’t need to whisk, fold, or beat anything by hand; just toss everything into a blender. It’s ideal for when you want to impress without the stress.
Ingredients
3 eggs
1 cup sugar
2 cups milk
1 cup grated coconut (fresh or desiccated)
1 cup flour
3 tbsp butter (melted)
1 tbsp baking powder
1 tsp vanilla extract
A pinch of salt

Instructions
Preheat the oven to 180°C (350°F). Grease and lightly flour a medium cake pan.
Blend the ingredients: In a blender, combine the eggs, sugar, milk, butter, and vanilla. Blend until smooth.
Add dry ingredients: Add the flour, coconut, baking powder, and salt. Blend again just until mixed — don’t overdo it.
Pour into the pan and let it sit for a minute to remove any bubbles.
