Slow Cooker Chuck Roast and Potatoes
This Slow Cooker Chuck Roast and Potatoes is the ultimate cozy dinner that requires minimal effort and delivers maximum flavor. Tender, juicy beef and perfectly cooked potatoes, all infused with simple ingredients. It’s a hearty, comforting meal that guests will love and keep coming back for more.
2–3 lb chuck roast
4–5 medium potatoes, cut into chunks
1 large onion, sliced
2–3 cloves garlic, minced
Salt and black pepper, to taste
2 tbsp olive oil (optional, for browning)
1 cup beef broth (or water for a lighter version)
1 tsp dried thyme (optional, for added flavor)
Prepare the roast
Season the chuck roast with saltand black pepper. You can also brown the roast in a skillet with a bit of olive oil over medium-high heat to enhance flavor, but this step is optional.
Layer ingredients in slow cooker
Place the potatoes and sliced onion in the bottom of the slow cooker. Add the seasoned chuck roast on top, then sprinkle with minced garlic and dried thyme(if using).
Add liquid
Pour the beef broth into the slow cooker, covering the roast and potatoes.
Cook
Cover and cook on low for 7–8 hours, or on high for 4–5 hours, until the roast is tender and the potatoes are soft.
Serve
Once done, remove the roast from the slow cooker and slice or shred it. Serve with the cooked potatoes and onions, spooning some of the flavorful juices over the top.
For extra richness, you can add a couple of tablespoons of butter at the end of cooking.
For a gluten-free version, simply ensure your beef broth is gluten-free.
