Pork chops with caramelized onion sauce

                                Ingredients:
- 4 pork chops (bone-in)
 - Salt and pepper, to taste
 - 2 tablespoons olive oil
 - 1 large onion, sliced
 - 2 cloves garlic, minced
 - 1 cup chicken broth
 - 1/2 cup apple cider vinegar or white wine
 - 1 tablespoon Dijon mustard
 - 1 tablespoon honey or brown sugar
 - Fresh herbs (such as parsley or thyme) for garnish
 
Instructions:
- Prepare the Pork Chops:
 
- Season the pork chops generously with salt and pepper on both sides.
 
- Sear the Pork Chops:
 
- Heat the olive oil in a large skillet over medium-high heat.
 - Once the oil is hot, add the pork chops and sear for about 3-4 minutes on each side, until golden brown. Remove the pork chops from the skillet and set them aside.
 
- Cook the Onions and Garlic:
 
- In the same skillet, add the sliced onions. Cook for about 5 minutes, stirring occasionally, until they are softened and start to caramelize.
 - Add the minced garlic and cook for another minute.
 
- Make the Sauce:
 
- Pour in the chicken broth and apple cider vinegar (or white wine). Stir well, scraping up any brown bits from the bottom of the skillet.
 - Stir in the Dijon mustard and honey (or brown sugar), and bring the mixture to a simmer.
 
- Simmer the Pork Chops:
 
- Return the pork chops to the skillet, nestling them into the onion mixture.
 - Cover the skillet and let the pork chops simmer in the sauce for about 15-20 minutes, or until they are cooked through and tender.
 
- Finish and Serve:
 
- Once the pork chops are cooked, remove them from the skillet and set them aside on a plate.
 - Continue to simmer the sauce until it thickens slightly, if needed.
 - Spoon the sauce and onions over the pork chops and garnish with fresh herbs.
