Here’s a simple and delicious Oven Roasted Potatoes recipe that’s crispy on the outside, tender on the inside, and full of flavor!
Crispy Oven Roasted Potatoes

Cook Time: 40-45 minutes
Ingredients:
4 medium potatoes (Russet, Yukon Gold, or red potatoes)
3 tbsp olive oil (or melted butter)
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp paprika (optional, for extra flavor)
½ tsp dried rosemary or thyme (optional)
2 tbsp fresh parsley, chopped (for garnish)
Instructions:
Preheat oven to 425°F (220°C).
Prep the potatoes:
Wash and dry potatoes (peeling is optional).
Cut into 1-inch cubes or wedges for even cooking.
Season the potatoes:
In a large bowl, toss potatoes with olive oil, salt, pepper, garlic powder, paprika, and herbs (if using).
Roast in the oven:
Spread potatoes in a single layer on a baking sheet (use parchment paper for easy cleanup).
Roast for 20 minutes, then flip/stir for even browning.
Roast another 20-25 minutes until golden and crispy.
Garnish & serve:
