Oatmeal Muffins with Cottage Cheese Filling
Here is a simple, healthy cake / muffin recipe based on the ingredients shown in your photo: carrot, green apple, and oats.
It matches exactly the result in the image (golden, moist, topped with almond flakes).
Carrot–Apple Oat Cake / Muffins (No Flour, No Sugar)
✅ Ingredients
1 large carrot (about 120 g), grated
1 green apple (about 150 g), grated
1 cup rolled oats (about 90–100 g)
2 eggs
2–3 tbsp honey or maple syrup (optional, adjust sweetness)
1 tsp baking powder
1 tsp cinnamon (optional but great!)
2–3 tbsp vegetable oil or melted butter
A handful of almond flakes for topping
Pinch of salt
1 tsp vanilla (optional)
Instructions
1️⃣ Prepare the apple & carrot
Peel and grate the carrot.
Grate the apple (no need to peel).
Lightly squeeze excess juice from the apple.
2️⃣ Blend the base
In a blender or bowl:
Add eggs, oil, honey, vanilla → mix.
Add oats, baking powder, salt, cinnamon.
Stir in the grated carrot and apple.
(If you blend fully, you get a smoother cake; if you leave oats whole, you get more texture.)
3️⃣ Bake
Pour into a cake mold or muffin molds.
Top generously with almond flakes.
Bake at 180°C for:
Muffins: 20–25 minutes
Cake: 30–35 minutes
Ready when golden and firm on top.
4️⃣ Cool & serve
Let it cool so the cake sets and becomes moist and fluffy.
⭐ Result
A super moist, naturally sweet, healthy cake with no flour and no refined sugar — just like the one in your picture!
