Ingredients
Potatoes: 5 medium, boiled and mashed
Butter: 2 tablespoons
Onion: 2 small, finely chopped
Garlic: 2 cloves, minced
Minced Meat: 600g
Red Bell Pepper: 1, diced
Cherry Tomatoes: 5, quartered
Tomato Paste: 1 tablespoon
Processed Cheese: 8 slices (divided)
Shredded Cheese: 80g
Green Onion: 2 tablespoons, chopped
Eggs: 3
Milk: 150ml
Paprika: 1 teaspoon
Oregano: 1 teaspoon
Salt and Pepper: to taste
Dill (optional): for garnish
Instructions
Prepare the Mashed Potatoes: Boil the potatoes until tender, then mash with butter and salt until smooth. Divide the mashed potatoes into two equal portions.
Cook the Minced Meat Mixture: Heat a skillet over medium heat and fry the chopped onion in a tablespoon of butter until translucent, about 3 minutes. Add the minced garlic and cook for another 2 minutes. Add the minced meat and cook until the moisture evaporates, about 5-7 minutes. Add the diced red bell pepper and fry for 2 minutes. Mix in cherry tomatoes, salt, pepper, paprika, oregano, and tomato paste. Cook for 1 minute. Add chopped green onion, stir, and cook for another minute. Set aside.
Assemble the Casserole: Preheat the oven to 180°C. Spread half of the mashed potatoes evenly in a greased baking dish. Place 4 slices of processed cheese on top. Add the cooked minced meat mixture as the next layer. Spread the remaining mashed potatoes over the meat layer. Sprinkle shredded cheese evenly over the top and add the remaining 4 slices of processed cheese.
Prepare the Egg Mixture: In a bowl, whisk together eggs, milk, a pinch of salt, pepper, and a classic herb blend until smooth. Pour the egg mixture evenly over the casserole.
Bake the Casserole: Bake in the preheated oven for 20 minutes or until the top is golden and set.
