Fluffy Vanilla Muffin Recipe

Ingredients:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tablespoon vanilla extract

1 cup milk

Instructions:

Preheat Oven and Prepare Muffin Tins:

Preheat your oven to 375°F (190°C).

Line a muffin tin with paper liners or grease with butter or cooking spray.

Mix Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, and salt.

Cream Butter and Sugar:

In a large bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.

Add the eggs one at a time, beating well after each addition.

Stir in the vanilla extract.

Combine Ingredients:

Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined; do not overmix.

Bake:

Spoon the batter into the prepared muffin tins, filling each cup about 3/4 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
