Ingredients:

4 medium potatoes, grated

2 tablespoons melted butter or oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder (optional)

6 large eggs

Fresh parsley, chopped (for garnish)

Instructions:

Preheat the oven to 375°F (190°C) and lightly grease a muffin tin.

In a large bowl, combine the grated potatoes, melted butter or oil, salt, pepper, and garlic powder. Mix well.

Press the potato mixture into each muffin cup, forming a nest shape, and bake for 15-20 minutes, or until the edges are golden and crispy.

Remove the pan from the oven, crack an egg into each nest, and return the pan to the oven.

Bake for an additional 10-12 minutes, or until the eggs are cooked to your desired level of doneness.
