5-Minute Coconut Butter Cookies
(Prep time: 5 minutes | Bake time: ~10 minutes)

1/2 cup (1 stick) unsalted butter, softened
1/3 cup granulated sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup sweetened shredded coconut
Pinch of salt
???????? Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream butter & sugar:
In a bowl, mix softened butter and sugar until smooth and fluffy (use a fork, hand mixer, or just elbow grease!).
Add vanilla & dry ingredients:
Stir in vanilla extract, then add flour, shredded coconut, and a pinch of salt. Mix until dough forms — it may look crumbly at first but will come together.
Form cookies:
Scoop about 1 tablespoon of dough, roll into a ball, then flatten slightly on the baking sheet. Repeat with remaining dough. Leave space between cookies.
Bake:
Bake for 10–12 minutes, or until edges are lightly golden. Cool on the pan for a few minutes, then transfer to a rack.
Optional Add-Ins:
1–2 tablespoons of coconut milk or cream (for extra moisture)
A drizzle of melted chocolate on top after baking
Sprinkle with a little sea salt or powdered sugar
No Oven? Try This!
Skillet Version:
Shape dough into flat discs and cook in a nonstick skillet over low heat, ~2-3 minutes per side until golden.
