Zucchini Chops Recipe
This simple yet delicious recipe combines tender zucchini with juicy chops for a flavorful, healthy, and satisfying meal!
Ingredients:
Pork or lamb chops: 4 (about 1-inch thick)
Zucchini: 2 medium-sized, sliced into thick rounds or half-moons
Olive oil: 3 tablespoons
Garlic: 3 cloves (minced)
Fresh rosemary or thyme: 1 tablespoon (chopped, or 1 teaspoon dried)
Paprika: 1 teaspoon
Salt: To taste
Black pepper: To taste
Lemon juice: 1 tablespoon
Parmesan cheese: 2 tablespoons (optional, for garnish)
Instructions:
1. Season the Chops
Pat the chops dry with paper towels.
Season generously on both sides with salt, pepper, paprika, and half of the minced garlic. Rub the seasonings into the meat.
2. Sear the Chops
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Add the chops and sear for 3–4 minutes per side, or until golden brown. (Cooking time will vary based on thickness.) Remove the chops from the skillet and set aside.
3. Cook the Zucchini
In the same skillet, add the remaining olive oil and minced garlic. Sauté for 1 minute until fragrant.

4. Combine and Finish
Return the chops to the skillet, nestling them among the zucchini.
Lower the heat, cover the skillet, and let everything simmer for 5–7 minutes to allow the flavors to combine.
Drizzle with lemon juice for brightness and sprinkle with Parmesan cheese, if desired.
