Traditional Preserved Lemon Recipe

★Ingredients
3 tablespoons of sea salt
6 fresh lemons
Juice of 4 lemons
2 tablespoons of olive oil
Optional: garlic cloves, bay leaves, or chili peppers for extra flavor
★Instructions
Wash the lemons thoroughly and cut them into thin slices or quarters (depending on your preference).
Sprinkle the sea salt over the lemons and rub it into each piece.
Place the salted lemons tightly into sterilized glass jars, adding any optional ingredients like garlic, bay leaves, or chili peppers between the layers.
Pour the freshly squeezed lemon juice over the lemons until they are completely covered. Leave a little space at the top of the jar.
Add a thin layer of olive oil on top to seal the lemons.
Close the jars tightly and store them in a cool, dark place for 2-3 weeks, shaking the jar occasionally to redistribute the salt and juices.
Once the lemons are soft and flavorful, they are ready to use! Store them in the fridge after opening for prolonged freshness.
