Ingredients:
1 sheet puff pastry (store-bought or homemade)
2 cups mushrooms (button or cremini), sliced
1 small onion, finely chopped
1 tbsp olive oil or butter
1 tsp garlic, minced
1 tbsp fresh thyme (or 1 tsp dried thyme)
1/2 cup heavy cream
Salt and pepper to taste
1 egg (for egg wash)
Fresh parsley for garnish (optional)
Instructions:
Prepare the mushrooms: Heat the olive oil or butter in a large pan over medium heat. Add the chopped onions and cook until soft, about 3-4 minutes. Add the garlic and cook for another 1 minute until fragrant. Add the sliced mushrooms, thyme, salt, and pepper. Cook until the mushrooms release their moisture and become tender, about 7-10 minutes. Add the heavy cream and stir to combine. Let it simmer for 2-3 minutes, then remove from heat and allow to cool.
Prepare the puff pastry: Preheat your oven to 375°F (190°C). Roll out the puff pastry sheet onto a parchment-lined baking sheet. Using a knife, score a border around the edges, about 1 inch from the edge, to create a frame. Be careful not to cut all the way through.
Assemble the pastry: Once the mushroom mixture has cooled slightly, spread it evenly inside the puff pastry frame. Brush the edges of the pastry with the beaten egg to help it brown.
Bake: Place the puff pastry in the oven and bake for 25-30 minutes, or until the pastry is golden brown and crispy.
Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley and serve warm.
