Ingredients:
4 large potatoes, thinly sliced
2 cups heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
2 tbsp unsalted butter
1 tbsp fresh parsley, chopped (for garnish)
Salt and pepper to taste
1/2 tsp paprika (optional)
1 tbsp olive oil (for greasing the baking dish)
Instructions:
Preheat the oven: Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or butter.
Prepare the potatoes: Peel and thinly slice the potatoes into even rounds. Set aside.
Make the cream mixture: In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the cheddar cheese and Parmesan cheese, and cook until the cheese is melted and the sauce is smooth. Season with salt, pepper, and paprika (if using).
Assemble the dish: Arrange a layer of sliced potatoes at the bottom of the greased baking dish. Pour a portion of the cheese sauce over the potatoes. Repeat the layering process until all potatoes and sauce are used, finishing with a layer of sauce on top.
Bake the potatoes: Cover the dish with aluminum foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
Garnish and serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley and serve hot. Enjoy your cheesy scalloped potatoes!
